I've eaten cauliflower 'rice' from the supermarket before and it was just awful. I mean, not-worth-eating-throw-it-in-the-bin-right-now awful.
I love Indian food, so does John, and the biggest problem with going Paleo is what do we use to accompany our curries? We can't eat grains, so no rice and no naan bread.
Good grief, is life worth living?
So, I decided to have a go at making a tasty cauliflower 'rice', though it seemed like a tough call. But I love Cauliflower, so I just had to come up with a way of making it taste good.
The other important thing was that it needed to soak up the curry sauce. "A-HA!" I thought, "I know, I'll add some coconut to it; that'll help it to soak up the curry sauce. Genius!"
This recipe is pretty much what I put into my first attempt at Cauliflower rice. I'll add more versions as I try them.
* I did try another version of this with grated zucchini in as well as broccoli and spinach, and that was nice, too.
Over the years, we've tried all sorts of diets. Not diets to lose weight, but diet as in what foods we should eat to make us feel good.
